Long, red, sweet peppers are beautiful in colour and shape on their own. Just slice them up in salads and enjoy. But with just a little bit more trouble you can stuff and bake them in the oven and that, I tell you, will turn them into incredible flavour bombs.

Serve as side dish with any meat or as a vegetarian dish on their own with a fresh salad to accompany. The chilli flavoured cheese cubes and nutty buckwheat groats are a fine pair, and you may use all the oil in the pack to flavour the stuffing too. Finish with a layer of mozzarella.

Instructions

Prepare and boil buckwheat groats according to package instructions using 1 dl groats and 3 dl water.

Cut peppers lengthwise in half and deseed. Peel and dice onion. Cut tomatoes in half, discard seeds and dice the tomato flesh.

Combine buckwheat, onion, tomatoes and chilli Snack pack with its oil. Season with salt and black pepper.

Divide the stuffing among the 4 pepper halves. Sprinkle with mozzarella and bake in 200° oven for 30 minutes.
