Apetina® Grilling Cheese burger with pickled onion, smashed avocado & grilled peppers

For the pickled red onions

  • 50 ml red wine vinegar
  • 2 tsp white sugar
  • ¼ tsp salt
  • 1 small red onion , thinly sliced

For the burger

  • 1 avocado , stoned
  • 1 tsp lime fruit juice
  • 2 brioche burger buns , halved
  • Small handful of iceberg lettuce or batavia lettuce
  • 4-6 roasted red pepper (from a jar)
  • 1 pack Apetina® Grilling cheese , sliced into 4 thick slices (about 5mm per slice)
  • 1-2 tbsp barbeque sauce , or your favourite burger sauce
  • salt and pepper to season

Combine the vinegar, sugar and salt in a small pan, and heat. Once the sugar has dissolved pour over the onion slices and pickle them for a minimum of 15 minutes. Drain off any excess vinegar just before serving.

Mash the avocado in a bowl, add the lime juice and season as you like.

Toast the buns and top with the lettuce, roasted red peppers, mashed avocado and pickled onions.

Heat up a griddle pan and wipe off any excess water from the Apetina® Grilling Cheese. Once the pan is hot, grill the cheese slices for couple of minutes on each side, then add to the burger. Drizzle with your choice of sauce and serve immediately.
