Paneer Fajitas

Ingredients

For the Seasoning

  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp dried oregano

For the Fajitas

  • 450 grams Apetina® Paneer cut into thick strips
  • 2 red peppers cored and sliced
  • 2 yellow peppers cored and sliced
  • 1 red onion peeled and sliced
  • 1 lime
  • 2 tbsp vegetable oil
  • 2 cloves garlic peeled and finely minced
  • 20 g fresh coriander

To Serve

  • tortilla
  • guacamole
  • sour cream
  • fresh lime

This smoky Tex-Mex recipe is guaranteed to become a midweek favourite! Thanks to its texture, Apetina Paneer not only adds extra bite to your tacos but also draws in the smoky and spicy flavours that make Tex-Mex so moreish.

Mix all the ingredients for the fajita seasoning and set aside.

Put the Apetina® Paneer and vegetables into a large bowl. Mix in the seasoning and the juice of one lime juice.

Heat a large pan and add half the vegetable oil and the garlic. Add half the Apetina® Paneer and vegetable mixture into the pan and cook for five minutes or until golden. Remove from the pan and set aside. Add the remaining oil and cook the remaining Apetina® Paneer and vegetables for 5 minutes or until cooked and golden.

Replace the first batch of Apetina® and vegetables into the pan and heat everything through for one minute. Serve in tortilla bread, with a dollop of sour cream, guacamole, and a squeeze of lime.
