Substitute the mozzarella for Apetina Cheddar & Mozerella for even more flavour.
Serve with green salad and a generous serving of guacamole.
Boil quinoa with 1 dl of water, folllowing the package instructions. Place one tortilla in a non-sticky pan and spread quinoa, chopped spring onions, red pepper and cheese on top. Season with salt, pepper and cumin. Place a second tortilla on top and fry until the bottom tortilla becomes golden. Use a plate to flip the quesadilla to fry the other side as well. When both sides are golden and crispy and the cheese has melted the quesadilla is done.
