Blueberry & Avocado Quinoa Salad

Ingredients

  • Juice & rind of 2 lime
  • 200 g mixed quinoa
  • 2 tbsp sesame oil
  • 1 tsp honey
  • Salt and pepper to season
  • 2 tbsp finely chopped parsley
  • ½ a diced cucumber
  • 1 peeled and diced, large avocado
  • 4 finely sliced spring onions
  • 150 g Blueberries
  • 150 g sliced and crumbled Apetina® Classic Creamy Block

Cook the mixed quinoa according to pack instructions, drain and set aside to cool.

Meanwhile, mix together the lime juice, rind, sesame oil, olive oil, honey, salt and pepper.

Place the quinoa in a large bowl, mix in the dressing, parsley, and remaining ingredients, except the Apetina® White Cheese.

Plate up, scatter over the Apetina® White Cheese, then devour!
