Mexican style salad with black beans, lime and Apetina Mango & Chilli

Ingredients

  • 250 g cucumbers with the seeds scooped out and cut into half-moon pieces
  • 250 g pineapples cut in small pieces (grilled if preferred)
  • 250 g cherry tomatoes halved - use different colors for a vibrant look
  • 1 red onion thinly sliced
  • 250 g cooked black beans
  • Juice and zest from 1 lime
  • 1 tsp salt
  • Freshly cracked black pepper

Topping

  • 50 g roughly chopped peanuts
  • 1 pack Apetina Mango & Chili
  • 1 fresh coriander

Twist

Serving suggestions: serve this salad with tacos or nachos, guacamole and/or pulled chicken or falafels.

A salad that is pleasing to the eye and the pallet. We’re turning up for both colours and flavour with this salad. P.S. it’s quick and easy to make! What’s not to love?

Mix all the ingredients together and arrange on a big platter.

Distribute peanuts, cheese and coriander as topping.
