Avocado and hummus flatbread

  • 2 ripe avocados
  • 1 lemon
  • 4 flatbread
  • 100 g rocket leaves
  • 250 g hummus
  • 4 tsp harissa paste
  • 200 g (1 pack) Apetina® Classic block
  • 0.5 tsp paprika


Harissa is a North African hot chilli paste. Any chilli sauce will work as a substitute.


Serve as if or with a green salad for a more complete meal.

Middle Eastern flavours meet in this super quick grilled flatbread. Top with homemade hummus or your favourite store bought, and dinner is served within 5 minutes.

Halve, stone and peel the avocados. Cut each half into thin slices and squeeze some lemon juice over the top to prevent them from browning.

Crumble the Apetina® into chunks, and set aside.

Warm the flatbread on a hot grill pan for 1 minute on each side, until slightly charred.

Spread each flatbread with 3 tablespoons of hummus and 1 teaspoon of harissa. Scatter a handful of rocket and the slices of avocado over the top. Sprinkle with Apetina®, then garnish with a pinch of paprika and serve.
