Use cream cheese as a base for an easy and flavourful sauce.
Serve with fresh salad or bread for a complete meal.
Preheat the oven to 240°C. Bring a pot, large enough to hold the potatoes, of salted water to a boil. Peel the potatoes, halve them lengthwise and cut them into chunks. Boil them for 5 minutes, drain and toss with olive oil. Add to a baking tray along with the oil and bake for 20 minutes stirring the potatoes every 5 min. After 10 min. turn the oven down to 200°C and add the chicken, each wrapped in 2 slices of Parma ham, to the oven and cook for 15 more minutes.
Meanwhile make the sauce. Add the wine to a pot and bring to a boil. Turn down the heat and whisk in the cream cheese. Season to taste with salt and sugar. Add the sliced chives.
