Crispy quesadillas

Quesadillas with Queso Fresco

  • 2 large tortillas
  • 4 tbsp guacamole
  • 0.5 pack of Apetina® Queso Fresco , finely grated or crumbed
  • 2 spring onions
  • 4 tbsp sweetcorn
  • 4 tbsp fresh tomato salsa
  • 2 picked jalapenos slices


Add in black beans for a more filling meal.


Serve with a side of salsa.

Queso Fresco is a creamy and soft Mexican fresh cheese, which works wonderfully melted in these vegetarian quesadillas.

Spread out 2 tablespoons quacamole on each tortilla. Add queso fresco in an even layer on both tortillas. Then add the spring onions, sweetcorn, toato salsa and jalapenos in an even layer on both tortillas.

Press down to make ingredients stick. Fold each tortilla once and press again.

Fry each tortilla in a dry pan over medium heat until golden, about 2 minutes on each side. Cut the quesadillas in half, making 4 servings. Now enjoy.
