The sweet onions paired with the salty cheese give a nice well rounded taste.
Serve with a green salat
Peel and thinly slice the red onion.
Mix onion, water, sugar, vinegar, oil and salt and pepper in a pot and bring to a boil. Let the mixture boil at medium heat for 45 minutes while stirring continuously, or until all liquid has been absorbed and the onions are soft.
Set the oven for 180 degrees.
Place the pie crust in a pie dish and the dough firmly against the edges. Now fill the onion mixture onto the crust, sprinkle with white cheese and thyme.
Bake in the oven for approx. 40-50 minutes or until the edges are golden brown and the filling has set.
