Roasting the zucchini in spices, brings out a lot of flavour and gives the dish a nice soft bite.
Serve with good piece of meat or fish and fresh bread for a complete meal.
Harissa is a North African chilli paste, consisting, among other things, of cumin and coriander.
Preheat the oven to 225 °C. Cut the zucchini into thin slices. Stir together harissa, honey and oil. Mix in the zucchini and lay out the slices on a baking sheet lined with parchment paper. Salt and roast the zucchini in the middle of the oven until it begins to brown approx. 15-20 minutes. Place the zucchini and sprouts on a serving platter. Crumble the cheese, sprinkle on top and garnish with mint.
