Cheesy Chicken Burgers

Ingredients

  • 400 g minced chicken meat
  • 200 g Apetina® Classic Cubes in Oil
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 2.5 dl Turkish yogurt
  • 1 clove of garlic
  • 1 dl flatleaf parsley
  • 2 tbsp juice of lemon
  • 1 tsp honey
  • mixed green salad
  • 4 burger buns
  • oil for frying

Homemade burgers are always a safe choice at my house, my children love them and I must admit I have a special place reserved for them in my heart. Or should I say stomach? Apetina cheese cubes are the secret behind the rich flavour and juiciness of these homemade chicken burgers. Mix of different colour bell peppers and the lemony yoghurt dressing are exactly the rights companions to the succulent chicken.

From the beginning of grill season, different kind of burgers sizzle on my grill. I never get tired of them either, as there are endless ways of varying the toppings, spices, experimenting with different kind of cheese and combinations. This chicken burger however will surely be a regular visitor on my grill. How did it take me this long to figure out that Apetina cheese cubes take the chicken burger to the next level?

Instructions:

Mix minced chicken, your chosen Apetina cheese cubes and salt and pepper and mould the dough into 4 chicken patties using wet hands. Clean the capsicums and cut into pieces. Fry or grill, so they get a bit of colour and spice with salt. Oil the chicken patties and grill or fry until well-done. Make the dressing by mixing yoghurt, minced garlic, chopped flatleaf parsley and lemon juice. Add honey and salt and pepper, if needed. Toast the buns and plate the burgers by putting a handful of salad on the bottom half of the bun. Lay the chicken patty on the salad and top with the capsicum mix and dressing and, finally, the top half of the bun.
