Josephine lives and breathes food; cooking, food styling, food photography and – most importantly – eating are among her favourite activities, to such an extent that it became the natural choice for her studies. She holds a BSc in Nutrition and Health, and is currently finishing a MSc in Human Nutrition.
Josephine’s love of food runs in her family DNA, dating all the way back to her great-grandmother who tapped birch sap from the trees in her garden and ate raw garlic whenever she had a cold.
Josephine loves all kinds of food, but has to admit that Thai food holds a special place in her heart. When it comes to her own cooking, she is passionate about Nordic cuisine, eats a very green diet and pays attention to the nutritional value of food. However, she is not a fanatic and has a secret crush on everything that includes bread – therefore, don’t be surprised if you see a burger, pizza, pie or burrito in between all the leafy greens in her recipes.
