Summer Potato Salad

  • 1 kilo new potatoes
  • 1 dl olive oil
  • 0.5 dl freshly squeezed juice of lemon
  • 1 tsp mustard de Dijon
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 - 5 spring onions
  • 6 - 8 radishes
  • 200 g Apetina® Classic Cubes in Brine
  • 1 dl chopped dill


Warm potatoes soak up every last drop of flavour from the vinaigrette.


Add garlic and fresh herbs to the vinaigrette for extra taste.

Summer time pampers us with a special treat; new potatoes. I often enjoy them with just butter and salt, but they actually work great in salads too. Good vinaigrette, saltiness from the cheese, a bit of crunch from the radishes ; here is the perfect side to accompany your summer BBQ.


Boil potatoes until they are done but still firm. Make the dressing by whisking together the oil, lemon juice, Dijon and salt and pepper. Pour the dressing over potatoes when they are still warm. Let cool.

Slice the spring onions and radishes. Combine potatoes, onions, radishes, cheese and chopped dill. Season with salt and pepper and serve, luke-warm or cold.
