Spicy carrots with cottage cheese

  • 250 g cottage cheese 4%
  • 500 tsp carrots
  • 1 organic lemon
  • 1 fresh red chili
  • 1 clove garlic
  • 1 shallot
  • 1 tsp sweet paprika spice
  • 1 tbsp cumin
  • 75 g butter
  • 5 g coriander leaves
  • 5 g mint leaves
  • Cane sugar


The Apetina cottage cheese will harmonize the complex mix of flavours of the other ingredients and also add a fresh mild bite to the dish


This recipe can be served as an appetizer or as a side dish with lamb chops and roasted rosemary potatoes

Cottage cheese brings together all the ingredients in this delicious Moroccan dish.

Clean the carrots and slice lengthways. Finely chop the shallot. Lightly brown the butter on a high heat before adding the carrots and shallot. Sprinkle the paprika and cumin over the carrots and shallot in the pan and toss well. Remove the pan from the heat, leaving the ingredients inside. Shred the zest of the lemon and add it with the lemon juice to the dish. Add 2 tbsp of pumpkin seeds and a pinch of sugar. Add the cottage cheese to the dish before tossing the ingredients together. Just before serving, garnish the dish with the roughly cut fresh herbs.
