Seasonal Berry Salad

  • 500 g green asparagus
  • 500 g fresh berries
  • 70 g rucola
  • 70 g baby spinach
  • 200 g Apetina® cooking cheese block light 8%
  • 1 dl roasted, sliced almond

Strawberry and poppy seed dressing

  • 2 dl strawberries
  • 1 tbsp sugar
  • 3 tbsp white wine vinegar
  • 1 dl oil
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp poppy seeds
  • 0.5 dl fresh basil


Cheese just loves to be served with berries.

Cut off the woody bits from the asparagus. Boil the asparagus for two minutes, rinse and put in ice cold water. Mix all the salad ingredients in a big salad bowl.

Make the dressing by putting strawberries, sugar and white wine vinegar in a blender. Blend until smooth (or use a hand blender). Let the machine run while you slowly add the oil. Season with salt pepper and poppy seeds. Pour the dressing over the salad and serve.
