Add in black beans for a more filling meal.
Serve with salsa, guacamole and sour cream on the side for a filling vegetarian meal.
Spread out 2 tablespoons quacamole on each tortilla. Add queso fresco in an even layer on both tortillas. Then add the spring onions, sweetcorn, toato salsa and jalapenos in an even layer on both tortillas.
Press down to make ingredients stick. Fold each tortilla once and press again.
Fry each tortilla in a dry pan over medium heat until golden, about 2 minutes on each side. Cut the quesadillas in half, making 4 servings. Now enjoy.
