Serve the crunchy mozzarella pearls as a snack with your favourite dip.
Pre-heat the frying pan to 180°C. Drain the mozzarella pearls and dry on kitchen roll. Shred the zest of the lemon and chop it finely together with the rosemary and garlic. Add this mixture to the flour. Break the eggs, separating the whites into a bowl. Mix the egg whites lightly together. Roll the mozzarella pearls in the flour mix. Coat the pearls with egg white by dipping them into the bowl. Roll the pearls in the breadcrumbs. Coat the pearls again with egg white by dipping them into the bowl. Roll the pearls one last time in the breadcrumbs. Deep fry the mozzarella pearls for 2 minutes at 180°C. Garnish the pearls with finely chopped rosemary and sea salt.
