Chocolate Chip Cookies

Ingredients

  • 1 cup almond butter
  • 100 g sugar
  • 1 tsp ground vanilla
  • 3 eggs
  • 1.5 dl rolled oats
  • 1.5 dl coconut
  • 1 tsp baking soda
  • 100 g chocolate
  • a generous pinch of salt

Try to use different nut butters as peanut or cashew to get a different flavour from batch to batch.

Serving

Enjoy straight from the oven with an ice cold glass of milk.

Everybody should have their own personal chocolate chip cookie recipe. One that you can whip up in a heartbeat, because you always have the ingredients at hand. One that puts a smile on the faces of your family, friends and guests. And perhaps most importantly, one that you simply can’t get enough of.

I have found my one and only cookie recipe, which I want to share with you. Hopefully, some of you will share my feelings towards it and make it your cookie recipe, too. As always you can vary the recipe in different ways to suit your pantry and taste buds. You can use different kinds of nut butters and sugar (even granulated sugar will work). You can ditch the coconut if you’re not a fan and add extra oats or you can vary the chocolate, if you prefer either white or milk instead. You can even adjust the baking time to get either a more firm and golden cookie or a more chewy texture, if you, like me, are a sucker for cookie dough. So no excuse not to try these cookies. I promise that the people around you, will love you for it.

Instructions:

Preheat oven to 175 C. In a large bowl mix nut butter, brown sugar, eggs and vanilla with an electric mixer until smooth. This will take a couple of minutes. Add the dry ingredients, mix together and gently fold in the chocolate chips. Use a tablespoon to scoop up the batter and place around 16 small cookies on a baking sheet. Bake for approx. 10 minutes and remove when the edges begin to turn slightly golden. Cool for 2 minutes on the cookie sheet then transfer to a wire rack to cool completely.
