Apetina Pineapple & Mango Salad

  • 200 g Apetina® Classic Block
  • 60 g macadamia nuts
  • 1 pineapple
  • 1 mango
  • 1 red onion
  • 1 lime - zest and juice
  • 0.5 red chilli - chopped
  • 1 clove of garlic
  • 0.5 dl chives
  • salt and pepper


If you can't find macademias, try substituting for cashews.


Goes well with any kind of grilled meat, chicken or fish.

Make the salad the hero of your meal by using other ingredients than the good old, tomato, lettuce and cucumber. This salad is packed with flavors from mango, grilled pineapple and chilli and it gets crunch from the nuts and creaminess from the white cheese.

Roast the macadamias in the oven at 180 °C for 5 minutes. Peel the pineapple from outer layer, remove the hard core and slice. Grill the pineapple slices shortly on each side and dice. Peel the mango, cut away the pit and dice. Break the Apetina cheese into bite size pieces and mix with the rest of the ingredients.
